Banana Chocolate Cake with Coffee Frosting
1/2 cup butter
1-1/4 cup sugar
2 eggs
1 tsp. soda
4 Tbsp.sour cream
1 cup mashed bananas
1-1/2 cup flour
1/4 tsp. salt
1 tsp. vanilla
1 cup chocolate chips
***Frosting***
2 Tbsp. butter
1 cup confectioners' sugar
1 Tbsp. strong hot coffee
1 tsp. dry cocoa
1/2 tsp. vanilla
1. Preheat oven to 350 degrees F. Grease and flour an 8-inch square
baking pan.
2. Cream butter and sugar, Add lightly beaten eggs and soda dissolved
in sour cream.
3. Beat well and add mashed banana, flour, salt and vanilla. Mix well
and stir in chocolate chips.
4. Bake in well greased and floured 8-inch square pan for 35 to 45
minutes.
Frosting:
Cream butter and sugar; add remaining ingredients and mix well until
the consistancy for spreading.

Banana is an energy booster. It contain tryptophan, a type of protein that the body converts into serotonin. Serotonin is a hormone that is known to make you feel happy and improve your mood. It is also rish in iron that's why I love to include banana in our everyday meal whether we eat it in row or making a cake like this.

Thank you for writing. I eat at least one banana a day to help my fibromyalgia. I discovered this from
years and years ago when one of our sons was school wrestling, and the coach had them on bananas
to help with muscle spasms. Maggie
