Kairos Squash Kasserole

4 cups sliced fresh yellow squash
1 large red onion, diced big
2 pieces uncooked bacon, diced
1 cup mayo
2 large eggs
1 cup cheddar cheese
1 tablespoon heavy cream
3 cups soft bread crumbs *see note on the bottom
1 tablespoon unsalted butter
½ teaspoon minced garlic
Sea Salt
Cracked Black Pepper
Cracked White Pepper

Preheat a large sauté pan, and add bacon, butter & garlic. Cook on high heat for about 30 seconds, just long enough to get a good sear on all of it. Add in squash & onions and cook until onions start to become translucent. Remove from the heat and transfer into a large mixing bowl. Add in Mayo, Cheddar, Eggs, and heavy cream. Mix together with a spoon until ingredients become uniform. Add salt & pepper to taste, and fold in bread crumbs just until they are incorporated into mix.

Transfer mixture into a 9x13 casserole dish that has been sprayed with cooking spray or well oiled with oil or butter. Spread out evenly and sprinkle cheddar cheese lightly over the top. Cover with aluminum foil and bake in a 375 degree oven for 30 minutes. Uncover and cook just until cheese browns.

Serve immediately or cover and keep warm until you want to serve it. Enjoy!

*I use leftover rolls from the Kafe to make my breadcrumbs, but any soft untoasted breadcrumbs will work (leftover rolls, biscuits, or any soft bread) I have found that Italian Bread Crumbs or Panko Bread Crumbs do not work well with this recipe.
