Microwave Pralines
MICROWAVE PRALINES
INGREDIENTS
1 1/2 cups brown sugar
2/3 cup heavy cream (I use canned milk )
1/8 teaspoon salt
2 tablespoons margarine
1 1/2 cups pecan halves
1 teaspoon vanilla extract
DIRECTIONS
In a large, microwave safe bowl, combine sugar, cream, salt, margarine.Microwave on high 7-9 minutes or until soft ball stage (325 ), stirring once. Stir in pecans. Cook about 1 minute. Add vanilla. Beat by hand until mixture is creamy and begins to thicken -- about 3 minutes. Drop by teaspoonfuls onto wax paper. Let stand until firm.. (If mixture is runny, allow to cool 30 seconds more and try again.)
