Diabetic Puddings

Mandarin Pudding
 
A creamy, fruity chilled treat flavored with pineapple, coconut, and mandarin oranges.
 
 Ingredients  - Makes 6 Servings 
3 oz sugar free, reduced calorie vanilla pudding mix (one package, JELL-O preferred)
4 oz
Gelatin, orange, sugar free, dry serving, SD (one package, JELL-O preferred)
2/3 cup
Milk, nonfat/skim, dry (Carnation preferred)
1 cup
Pineapple, crushed, with juice, canned , undrained
2/3 cup
Soda, Mountain Dew, diet
3/4 cup
plain nonfat yogurt (Yoplait preferred)
3/4 cup
whipped fat-free topping (Cool Whip preferred)
1 tsp
coconut extract
1 cup
mandarin oranges, canned, with juice, drained , rinsed and drained
1 tbsp
flaked sweetened coconut

 Directions
1 Mix together the dry pudding mix, dry gelatin, and dry milk powder.
2 Using a wire whisk, mix in the undrained pineapple and Diet Mountain Dew.
3 Blend in yogurt, Cool Whip Free, and coconut extract, and then mix in mandarin oranges.
4 Divide pudding into 6 separate dessert dishes and sprinkle 1/2 teaspoon coconut over the top of each.
5 Refrigerate for at least 10 minutes before serving.

BANANA TOFFEE PUDDING
 
Banana cream pudding with fresh bananas and toffee bits.

 
 
 Ingredients  Makes 4 Servings 
 
1 Pudding, banana cream, fat & sugar free, instant, serving
2/3 cup
nonfat dry milk powder (Carnation preferred)
1 2/3 cup
water
1/2 cup
whipped fat-free topping (Cool Whip Free Preferred)
1 tsp
vanilla extract
2 cup
Banana, fresh, slices , diced
1/4 cup
English toffee baking bits (Heath Toffee Bits preferred)

 Directions
1 Mix together the dry pudding mix, dry milk powder, and water in a mixing bowl with a wire whisk.
2 Blend in the whipped topping and vanilla extract then mix in the bananas and toffee bits.
3 Divide mixture into 4 separate dessert dishes and refrigerate for 15 minutes before serving.
